This colorful and crowd-pleasing 7-Layer Dip is the perfect appetizer for parties, game days, or casual get-togethers. Each layer adds its own flavor and texture—from creamy beans and zesty guacamole to fresh toppings and melted cheese—making it impossible to resist.

Ingredients

  • 2 cans refried beans (black or pinto)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • 3 avocados, peeled and seeded
  • 1 tablespoon lime or lemon juice
  • 8 oz sour cream
  • ¾ cup salsa
  • 1½ cups shredded Mexican blend cheese (cheddar or Monterey Jack)
  • 6 oz sliced black olives
  • 2 green onions, chopped
  • 1 Roma tomato, diced (optional, for garnish)
  • Tortilla chips, for serving

Instructions

  1. Prepare the Bean Layer:
In a medium bowl, combine refried beans with chili powder, cumin, and garlic powder. Taste and adjust seasoning as needed. Spread the seasoned beans evenly on a large serving dish or in a 9×13-inch pan.
  2. Make the Guacamole Layer:
In another bowl, mash the avocados with lime or lemon juice until smooth. Spread the mixture evenly over the bean layer.
  3. Add the Creamy Layer:
Spread the sour cream evenly on top of the guacamole.
  4. Build the Remaining Layers:
Spoon small dollops of salsa over the sour cream. Sprinkle evenly with shredded cheese, black olives, and green onions. Add diced tomato on top, if desired.
  5. Chill and Serve:
Refrigerate until ready to serve. This dip can be made up to one day in advance. Serve with tortilla chips for dipping.

Tips

  • For a smoother consistency, blend the refried beans before seasoning.
  • Chill the dip for at least 30 minutes before serving to help the layers set.
  • Use ripe avocados for the creamiest guacamole layer.

Variations and Substitutions

  • Beans: Swap refried beans for hummus or black bean dip for a twist.
  • Dairy-Free: Use plant-based sour cream and vegan cheese.
  • Spice Level: Add diced jalapeños or a few dashes of hot sauce to the salsa for extra heat.
  • Toppings: Try adding shredded lettuce, corn, or diced bell peppers for color and crunch.

FAQs

Can I make 7-layer dip ahead of time?
Yes, it can be prepared up to 24 hours in advance. Cover tightly and refrigerate until ready to serve.

How long does it last in the fridge?
It’s best consumed within 2–3 days. The avocado layer may brown slightly, but the flavor remains good.

Can I use guacamole instead of fresh avocado?
