Last Modified: October 28, 2025

Arroz Chaufa, the popular Peruvian fried rice, combines tender chicken, scrambled eggs, fresh vegetables, and savory soy sauce for a flavorful one-pan meal. This easy-to-make stir-fry features hot dogs, bell peppers, green onions, garlic, and ginger, creating a perfect balance of textures and tastes. Ideal for weeknight dinners, leftover rice, or quick meals, this Peruvian fried rice recipe brings authentic Asian-Peruvian flavors to your table.

Ingredients

  • 2 tbsp sesame oil
  • 1 bunch green onions, chopped (separate white and green parts)
  • 1 bell pepper, diced
  • 2 hot dogs, sliced
  • 2 eggs, beaten
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup cooked, shredded chicken
  • 4 cups cold, pre-cooked rice
  • 2–3 tbsp soy sauce (adjust to taste)
  • Salt, to taste

Instructions

  1. Heat a large skillet or wok over medium heat and add sesame oil.
  2. Sauté the hot dogs, white parts of the green onions, and bell pepper until slightly tender. Add garlic and ginger, cooking for another 30 seconds until fragrant.
  3. Push the vegetables to one side of the pan. Pour the beaten eggs on the other side and scramble until fully cooked. Mix the eggs with the vegetables.
  4. Add the rice and shredded chicken to the pan. Pour soy sauce over the mixture and stir-fry until everything is evenly heated and combined.
  5. Stir in the green parts of the onions and season with salt if needed. Serve hot.

Tips

  • Use cold, pre-cooked rice to prevent it from becoming mushy.
  • Chop vegetables uniformly for even cooking.
  • Adjust soy sauce gradually to control the saltiness.

Variations and Substitutions

  • Substitute hot dogs with cooked shrimp, bacon, or tofu.
  • Swap bell pepper for carrots, peas, or corn.
  • Use tamari instead of soy sauce for a gluten-free version.
