  2. Drain well and mash the potatoes with 4 tbsp butter. Allow them to cool to room temperature. You can prepare mashed potatoes 1 to 3 days ahead for convenience.

How to Make Mashed Potato Pancakes:

  1. In a large mixing bowl, combine 4 cups of mashed potatoes, 2 cups of shredded mozzarella cheese, 1 large egg, 1/4 cup of flour, and 2 1/2 tbsp chopped chives. Use a potato masher to mash the mixture together until everything is well combined.
  2. If the potato mixture is too loose to hold a patty shape, gradually add more flour, one tablespoon at a time.
