Chicken Parmesan

Chicken Parmesan is a classic Italian-American dish featuring breaded chicken breasts topped with marinara sauce, melted mozzarella, and Parmesan cheese. Ingredients

  • 3 boneless, skinless chicken breasts, halved horizontally to make 6 thin breast halves
  • ½ cup freshly grated Parmesan cheese, divided

  • 1 cup Italian-style bread crumbs (or panko)
  • 1 teaspoon garlic powder
  • 3 tablespoons oil
  • 24 ounces marinara sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Prepare the Chicken
    • Preheat oven to 450°F (230°C).
    • Butterfly chicken breasts: Place your hand on top of each breast and carefully slice horizontally to create two thin, even halves.
    • Pat chicken dry and season both sides with salt and pepper.
  2. Bread the Chicken
    • In a shallow bowl, beat the eggs.
    • In another bowl, mix panko, Italian bread crumbs, ¼ cup Parmesan, and garlic powder.
    • Dip each chicken piece into the eggs, then coat with the breadcrumb mixture on both sides.
  3. Pan-Fry the Chicken
    • Heat oil in a large skillet over medium-high heat.
    • Fry the breaded chicken 2 minutes per side until golden, but not fully cooked.
  4. Assemble the Dish
    • Spread a thin layer of marinara sauce in a 9×13-inch baking pan.
    • Place the partially cooked chicken on top of the sauce.
    • Spoon additional marinara over each piece and sprinkle with mozzarella and remaining Parmesan cheese.
  5. Bake
    • Bake for 10–15 minutes until cheese is melted, bubbly, and chicken reaches 165°F (74°C).
  6. Serve
    • Garnish with fresh basil leaves.
    • Serve over cooked spaghetti or your favorite pasta, with extra marinara sauce if desired.
