For the Chocolate Cake

  • 2 cups (240 g) all-purpose flour
  • 2 cups (400 g) superfine sugar
  • ½ cup (50 g) Dutch-processed cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 teaspoon espresso powder
  • ½ cup (120 g) whole milk
  • ½ cup (128 g) sour cream
  • ½ cup (110 g) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240 ml) hot water

For the Chocolate Fudge Frosting

  • 4 sticks (452 g) unsalted butter, softened
  • 16 oz (453 g) dark chocolate, finely chopped
  • 1 cup (240 ml) heavy cream
  • 3 cups (360 g) powdered sugar
  • ¼ cup (25 g) Dutch-processed cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

1. Bake the Chocolate Cake

  1. Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.
  3. In a separate bowl, whisk eggs, milk, sour cream, vegetable oil, and vanilla until smooth.
  4. Add the wet mixture to the dry ingredients and whisk until no lumps remain.
  5. Dissolve espresso powder in hot water. Pour into the batter and stir until fully incorporated.
  6. Divide batter evenly between the pans.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cakes cool in the pans for 1 hour before removing. Cool completely on a wire rack.

2. Make the Fudge Frosting

  1. Place chopped chocolate in a bowl. Heat cream in a saucepan over medium heat until just before boiling.
  2. Pour hot cream over the chocolate and let sit 1 minute. Stir until smooth and glossy.
  3. In a stand mixer, beat softened butter on medium-high speed for 5 minutes until pale and fluffy.
  4. Let ganache cool to room temperature. Gradually add it to the butter, one tablespoon at a time, mixing well between each addition.
  5. Add powdered sugar, cocoa powder, vanilla, and a pinch of salt. Switch to a paddle attachment and mix slowly at first, then beat for 2 more minutes.

3. Assemble the Cake

  1. Level the cakes with a serrated knife if needed. For a four-layer cake, slice each cake in half horizontally.
  2. Place the first layer on a cake board or serving plate. Add a generous layer of frosting and spread evenly.
  3. Repeat with remaining layers.
  4. Spread a thin crumb coat over the cake and chill for 10 minutes.
  5. Apply a final thick layer of frosting and decorate as desired.
