    • Directions

Ingredients

  • Zest of 1 lime
  • Zest of 1 lemon
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 large garlic clove (or 2 small), peeled
  • 1 cup fresh basil leaves, loosely packed
  • 1 cup fresh cilantro leaves, loosely packed
  • ½ cup fresh parsley leaves, loosely packed
  • ¼ cup fresh chives, roughly chopped
  • 2 tablespoons fresh thyme leaves
  • ½ cup extra virgin olive oil
  • 2 pounds large shrimp (16/20 count or larger), peeled and deveined
  • Metal or wooden skewers

Optional for serving:

  • Extra fresh herbs for garnish
  • Lemon and/or lime wedges

Instructions

  1. In the bowl of a food processor, combine the lime zest, lemon zest, salt, pepper, and garlic. Pulse several times until the garlic is finely minced.
  2. Add the basil, cilantro, parsley, chives, and thyme. Pulse briefly to chop the herbs.
  3. With the processor running, slowly drizzle in the olive oil until the marinade is smooth and well blended.
  4. Transfer the marinade to a large zip-top bag. Add the shrimp, seal the bag, and gently massage to coat evenly. Refrigerate for at least 1 hour, or up to overnight, turning the bag occasionally for even marinating.
  5. Preheat the grill to medium-high heat. If using wooden skewers, soak them in warm water for at least 30 minutes beforehand to prevent burning.
  6. Remove the shrimp from the marinade and thread 3–4 shrimp onto each skewer.
  7. Grill for 2–3 minutes per side, depending on size, until lightly charred and pink and opaque throughout. Avoid overcooking to keep the shrimp tender.
  8. Garnish with additional fresh herbs and serve immediately with lemon or lime wedges.

Tips

  • Pat the shrimp dry before marinating to help the flavors adhere better.
  • Do not marinate longer than overnight, as the citrus zest can start to affect texture.
  • Shrimp cook quickly—watch closely to avoid a rubbery texture.
  • Clean and oil grill grates before cooking to prevent sticking.

Variations and Substitutions

  • Replace basil with fresh oregano for a Mediterranean flavor profile.
  • Add a pinch of red pepper flakes for subtle heat.
  • Use avocado oil instead of olive oil if preferred.
  • Swap shrimp for scallops or chunks of firm white fish.
  • Cook on a grill pan or under a broiler if outdoor grilling isn’t available.

FAQs

How long should I marinate the shrimp?
At least 1 hour for good flavor, but up to 8–12 hours works well.

Can I use frozen shrimp?
Yes, thaw completely and pat dry before marinating.

How do I know when shrimp are done?
They turn pink and opaque, and curl into a loose “C” shape when properly cooked.

Can I make the marinade ahead of time?
Yes, prepare it up to 2 days in advance and store in the refrigerator.
