Country Chicken and Roasted Potato Bake

Easy country chicken and roasted potato bake made with boneless chicken thighs, vegetables, and a cheesy potato topping. This one-pan dinner recipe is perfect for busy weeknights or family meals. Ingredients

Chicken Filling:

  • 1 tsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 1 kg boneless chicken thighs, cut into thirds
  • 100g mushrooms, halved
  • 2 garlic cloves, crushed
  • 1 can (approx. 400g) creamed corn
  • 1 cup boiling water
  • 1 packet (approx. 35g) French onion soup mix
  • 1 tsp dried mixed herbs

Potato Topping:

  • 600g potatoes, peeled and diced into 1cm cubes
  • 1 tsp olive oil
  • 1 sprig rosemary, finely chopped
  • 50g Colby cheese, grated
  • 20g Parmesan cheese, grated

Instructions

  1. Preheat the oven to 200°C fan bake.
  2. Prepare the potatoes: Spread the diced potatoes on a lined baking tray. Drizzle with olive oil, season with salt, and sprinkle with chopped rosemary. Roast for 20 minutes.
  3. Make the filling: While the potatoes bake, heat olive oil in a large frying pan over medium heat. Add the onion, carrot, and celery. Cook for 5 minutes until softened.
  4. Add the chicken, mushrooms, and garlic to the pan. Cook for another 5 minutes, stirring frequently.
  5. Pour in the creamed corn, boiling water, French onion soup mix, and dried herbs. Stir to combine and remove from heat.
  6. Assemble the bake: Transfer the chicken mixture to a large baking dish. Bake for 20 minutes.
  7. Give the potatoes a shake and return to the oven for another 20 minutes alongside the chicken filling.
  8. Remove the baking dish and roasted potatoes from the oven. Stir the filling gently, then layer the potatoes over the top. Sprinkle with Colby and Parmesan cheese.
  9. Grill the topping: Set the oven to grill. Grill the bake for 5–10 minutes until the cheese is melted and golden. Watch carefully to avoid burning.
  10. Serve hot with seasonal steamed or sautéed green vegetables.
