  • 2 cups low-sodium beef broth
  • 4 medium Yukon Gold potatoes, peeled and diced (see notes)
  • 3/4 cup frozen peas
  • Kosher salt and freshly ground black pepper, to taste

Instructions:

  1. Cook Bacon: In a large Dutch oven or pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the pot.
  2. Brown Beef & Sausage: Add the ground beef to the pot and cook, breaking it up with a spatula as it browns. When the beef is about halfway browned, add the sliced Kielbasa sausage, chopped onions, and carrots. Continue to cook over medium-high heat until the ground beef is fully browned and the onions have softened.
  3. Add Spices: Reduce the heat to low and stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute, stirring frequently, to release the aromas of the spices.
  4. Add Tomatoes, Beans & Broth: Stir in the Rotel tomatoes, pinto beans, corn, and beef broth. Bring the mixture to a low boil, then reduce the heat and simmer.
  5. Cook Potatoes & Add Peas: Once the stew is simmering, add the diced potatoes and continue cooking until the potatoes are tender, about 15-20 minutes. Add the frozen peas and cook for an additional 2-3 minutes.
