Slow cooker baked beans made with kielbasa, bacon, onion, and classic canned baked beans simmered in ketchup, brown sugar, and Worcestershire sauce. This easy crock pot baked beans recipe is ideal for barbecues, potlucks, family dinners, and summer cookouts, delivering rich smoky flavor with minimal prep.

Ingredients

  • 14 oz kielbasa, quartered lengthwise then chopped
  • 4 slices bacon, chopped
  • 1 large shallot or 1 small onion, finely chopped
  • 2 (28 oz) cans baked beans (vegetarian or your preferred variety)
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar (adjust to taste)
  • 1 tablespoon Worcestershire sauce (gluten-free if needed)

Instructions

  1. Place the chopped kielbasa, bacon, and shallot (or onion) into a large, unheated skillet.
  2. Set the skillet over medium heat and cook, stirring occasionally, until the bacon is fully cooked but not overly crisp, about 10–12 minutes.
  3. Transfer the sausage and bacon mixture to a 6-quart slow cooker.
  4. Add the baked beans, ketchup, brown sugar, and Worcestershire sauce. Stir well to combine.
  5. Cover and cook on low for 6 hours.
  6. Remove the lid for the last 10 minutes of cooking to allow the sauce to thicken slightly. Stir, then serve warm.

Tips

  • Start the meat in a cold skillet to render the bacon slowly and build flavor.
  • Taste before serving and add more brown sugar if you prefer sweeter baked beans.
  • Let the beans sit uncovered briefly after cooking for a thicker texture.

Variations and Substitutions

  • Use smoked sausage or andouille instead of kielbasa.
  • Swap brown sugar for maple syrup or honey for a different sweetness.
  • Add a pinch of smoked paprika or chili powder for extra depth.
