Ingredients

Special Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons finely minced dill pickles
  • 1 tablespoon pickle juice
  • 1 tablespoon finely minced white onion

Beef

  • 2 lbs ground beef (85/15 or 80/20)
  • 1 yellow onion, chopped
  • 1/2 cup gluten-free beef broth
  • 1 1/2 tablespoons apple cider vinegar
  • 1 tablespoon gluten-free tamari (or soy sauce if not gluten-free)
  • 1 tablespoon gluten-free Worcestershire sauce
  • 1 teaspoon brown sugar
  • Salt and black pepper, to taste

French Fries

  • 1 1/2 lbs gluten-free frozen French fries (any cut)
  • Homemade seasoned salt, optional
  • 6 oz shredded sharp cheddar cheese
  • 1 tomato, seeded and chopped
  • Finely minced white onion

Directions

Make the Special Sauce

Add all sauce ingredients to a small bowl and stir until smooth. Cover and refrigerate until ready to use. The sauce can be made up to 5 days in advance.

Cook the Beef

Add the ground beef, chopped onion, beef broth, apple cider vinegar, tamari, Worcestershire sauce, brown sugar, salt, and pepper to a 6-quart crock pot. Stir to combine.
Cook on HIGH for 4 hours, breaking up the meat and stirring about three times during cooking.

Prepare the Fries and Assemble

Bake the French fries on a large baking sheet according to package instructions. While still hot, season with seasoned salt if using.
Drain enough excess liquid from the beef mixture so it won’t make the fries soggy, then spoon the beef evenly over the fries. Sprinkle with shredded cheddar cheese and broil for 1–2 minutes, until the cheese is melted.
Top with chopped tomato, minced onion, and generous drizzles of special sauce. Serve immediately with extra sauce on the side.
