  • ¼ cup (30g) all-purpose flour
  • 1 onion, diced
  • ½ cup (50g) diced celery
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 teaspoons (5g) Cajun seasoning
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • 2 bay leaves
  • 2 cups (370g) long-grain white rice or basmati rice
  • 4 cups (960g) low-sodium chicken broth
  • ½ cup (50g) chopped green onion
  • ¼ cup (8g) fresh chopped parsley

Instructions

  1. Cook the Meat
    In a large saucepan or Dutch oven, cook the ground beef, sausage, and chicken livers over medium heat. Season with salt and pepper. Use a wooden spoon to break the meat apart as it browns.
  2. Add Flour and Vegetables
    Sprinkle the flour over the cooked meat and stir until combined. Add the onion, celery, and bell pepper. Sauté for about 2 minutes until the vegetables start to soften.
  3. Season and Combine
    Stir in the garlic, Cajun seasoning, cayenne pepper, oregano, thyme, and bay leaves. Mix well to coat everything evenly with the seasonings.
  4. Add Rice and Broth
    Pour in the rice and chicken broth. Stir to combine and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let simmer for 20 minutes.
  5. Rest and Fluff
    Remove the pot from the heat and let it rest for 5 minutes without lifting the lid. Then, uncover and gently fluff the rice with a fork. Replace the lid and allow it to rest for another 5 minutes for the best texture.
