Ingredients

For the Chicken:

  • 4 large chicken breasts (about 2 lbs)
  • 2 tbsp olive oil

  • 4 slices mozzarella cheese

For the Bruschetta Topping:

  • 12 oz Roma tomatoes (about ¾ lb), diced
  • 2½ tbsp fresh basil, chopped
  • 3 garlic cloves, minced
  • ½ tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 4 tbsp balsamic glaze (for drizzling)

Instructions

1. Make the Bruschetta Topping

In a medium bowl, combine diced tomatoes, basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper. Mix well and set aside.

2. Marinate the Chicken

Pound chicken breasts to even thickness. In a large bowl, combine 2 tbsp olive oil, salt, Italian seasoning, black pepper, and minced garlic. Add the chicken and toss to coat. Cover and marinate for 30 minutes.

3. Cook the Chicken

Heat 1 tbsp olive oil in a large skillet over medium heat. Add chicken breasts and cook for 3–5 minutes per side, or until the internal temperature reaches 165°F.

4. Add Cheese

Reduce heat to low. Place a slice of mozzarella on each chicken breast, cover the skillet, and cook until the cheese has melted.

5. Assemble and Serve

Remove chicken from heat. Top each piece with a generous spoonful of bruschetta topping and drizzle with balsamic glaze before serving.
