Ingredients

For the Dough

  • 4 tablespoons unsalted butter
  • ½ cup water
  • ½ cup whole milk (or 2%)
  • 1 packet instant yeast (2 ¼ teaspoons)
  • 3 cups all-purpose flour (plus extra for kneading and rolling)
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 large egg
  • A few drops of vegetable oil (for greasing the bowl)

For the Filling

  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 1 extra tablespoon melted butter (for greasing the pan)

For the Cream Cheese Icing

  • 8 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

1. Prepare the Dough

Melt the butter in a small saucepan over low heat. Remove from the heat and stir in the water and milk. The mixture should feel warm but not hot.

Sprinkle the yeast over the liquid and stir lightly. Let sit for about 5 minutes until slightly foamy.

In a large bowl, whisk together the flour, sugar, and salt. Add the warm butter mixture and the egg. Mix with a spatula until a soft dough forms.

Transfer the dough to a lightly floured surface and knead for about 5 minutes, until smooth and elastic.

Lightly oil a clean bowl, place the dough inside, cover, and let rest for 20 minutes.

2. Make the Filling

In a medium bowl, combine the brown sugar, granulated sugar, cinnamon, and salt. Stir in the melted butter until the mixture becomes thick and spreadable.

3. Assemble the Rolls

Place the rested dough on a well-floured surface. Roll it into a rectangle about 14–15 inches long and 9–10 inches wide, keeping the edges as even as possible.

Spread the cinnamon filling evenly over the surface, reaching close to the edges.

Starting from the long side, tightly roll the dough into a log. Pinch the seam gently to seal.

Using a sharp knife, cut the log into 12 equal rolls.

Grease a pie dish or baking pan with the remaining melted butter. Arrange the rolls inside, leaving a little space between each. Cover and let rise in a warm place for about 30 minutes, until nearly doubled in size.

4. Bake

Preheat the oven to 350°F (175°C).

Bake the rolls uncovered for 20–25 minutes, or until golden brown and fully baked in the center.

Remove from the oven and let cool slightly before icing.

5. Prepare the Cream Cheese Icing

Beat the softened cream cheese and butter together until smooth and creamy.

Add powdered sugar, vanilla extract, and salt. Mix on low speed until smooth and lump-free.

Spread generously over the warm rolls and serve.

Tips

  • Make sure your milk mixture is warm, not hot, to avoid killing the yeast.
  • Knead just until smooth—over-kneading can make the rolls dense.
  • For extra soft rolls, avoid overbaking. Remove them once lightly golden.
  • Use unflavored dental floss to slice clean, even rolls without squishing the dough.

Variations and Substitutions

  • Replace cream cheese icing with a simple powdered sugar glaze (powdered sugar + milk).
  • Add chopped pecans or walnuts to the filling for texture.
  • Swap cinnamon for pumpkin spice for a seasonal twist.
  • Use brown butter in the filling for deeper flavor.
  • Substitute dairy-free butter and plant-based milk for a dairy-free version.

FAQs

Can I make the dough ahead of time?
Yes. After shaping the rolls, cover and refrigerate overnight. Let them come to room temperature before baking.

Can I freeze cinnamon rolls?
Yes. Freeze baked (un-iced) rolls tightly wrapped. Reheat and frost before serving.

How do I store leftovers?
Store in an airtight container at room temperature for 1–2 days or refrigerate for up to 5 days. Warm slightly before serving.

Why didn’t my rolls rise?
The yeast may have been expired or the liquid too hot. Always check yeast freshness.
