Ingredients

For the Bars:

  • 4 cups chocolate cereal (gluten-free)
  • ½ cup dessert spread (such as dairy-free Nutella-style spread)
  • ½ cup honey
  • ¼ cup coconut oil, melted
  • 1 tbsp brown coconut sugar
  • 1 tsp alcohol-free vanilla extract

For the Drizzle:

  • 2 oz dairy-free chocolate chips
  • 1 tbsp coconut oil, melted

Instructions

  1. Line an 8×8 inch pan with parchment paper. Lightly spray the sides with non-stick baking spray for easier removal (optional but recommended).
  2. Place the chocolate cereal in a large mixing bowl.
  3. In a small saucepan over medium-low heat, combine the dessert spread, honey, melted coconut oil, brown coconut sugar, and vanilla extract. Stir frequently until smooth and fully melted.
  4. Pour the warm mixture over the cereal. Stir until the cereal is evenly coated.
  5. Press the mixture firmly and evenly into the prepared pan using a rubber spatula or the back of a spoon.
  6. In a microwave-safe bowl, combine the chocolate chips and melted coconut oil. Heat in 20-second increments, stirring between each, until fully melted and smooth.
  7. Drizzle the chocolate over the pressed bars.
  8. Refrigerate for at least 1 hour, or until set. Slice into bars and serve.

Tips

  • Press the mixture down firmly to help the bars hold together better once set.
  • Use a piece of parchment or wax paper over the top to press the mixture without sticking.
  • Let bars chill thoroughly before slicing for cleaner edges.

Variations and Substitutions

  • Nut-free: Use a seed-based spread instead of a nut-based dessert spread.
  • Low sugar option: Swap honey for a sugar-free syrup or use a reduced-sugar spread.
  • Cereal swap: Use any gluten-free cereal you like—puffed rice, corn flakes, or grain-free options all work well.

FAQs

Can I make these bars ahead of time?
Yes. They keep well in the fridge for up to 5 days in an airtight container.

Can I freeze them?
Absolutely. Freeze in a single layer, then transfer to a sealed container. Thaw in the fridge before serving.

Do they hold up at room temperature?
They’re best kept chilled. If serving at room temperature, try to do so within 1–2 hours to prevent softening.

Serving Suggestions

  • Pack them in lunchboxes or snack bags.
  • Serve chilled with dairy-free milk or coffee.
  • Cut into smaller bites for party platters or potlucks.
