  • 2 cups pitted Italian green olives (Mezzetta recommended)
  • 1 cup pitted Kalamata olives (Mezzetta recommended)
  • 4 oz Parmesan cheese, cut into 1/4” cubes

  • 1/2 tablespoon whole black peppercorns
  • 1 large sprig fresh rosemary
  • 1 large sprig fresh thyme
  • 3/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Juice of 1/2 lemon

Instructions

  1. Combine all ingredients in a large Ziplock bag. Place the bag inside a bowl to prevent leaks.
  2. Refrigerate for at least 24 hours, turning and rotating the bag occasionally to ensure the olives marinate evenly.
  3. Before serving, let the bag sit at room temperature for about 30 minutes so the olive oil softens and flavors meld.
  4. Pour the contents into a serving bowl and serve with toothpicks or tongs.
