  • 12 dried guajillo chiles, stems and seeds removed
  • 2 to 3 cups chicken broth or water
  • 8 garlic cloves, divided
  • 2 canned chipotle peppers in adobo sauce
  • 1/4 cup white vinegar
  • 2 teaspoons dried Mexican oregano
  • 3/4 teaspoon dried thyme
  • 1 tablespoon brown sugar
  • 2 teaspoons ground cumin
  • 1½ tablespoons kosher salt

For Serving

  • Cooked rice
  • Pinto beans
  • Lime wedges
  • Chopped cilantro
  • Warm corn tortillas
  • Diced white onion

Instructions

Prepare the Pork

  1. Cut the pork shoulder into bite-sized chunks.
  2. Season generously with salt and black pepper, then set aside.

Prepare the Chiles

  1. Remove the stems and seeds from all dried chiles.
  2. Tear the chiles into medium-sized pieces.
  3. Heat a dry skillet over medium heat and toast the chile pieces for 1 to 2 minutes, stirring frequently until fragrant.
  4. Transfer the toasted chiles to a medium saucepan and add enough chicken broth or water to cover them.
  5. Bring to a boil, then remove from the heat and cover.
  6. Let the chiles soak for 10 minutes until softened.

Make the Red Chile Sauce

  1. Using a slotted spoon, transfer the softened chiles to a blender.
  2. Add 1 cup of the chile soaking liquid, 4 garlic cloves, chipotle peppers, vinegar, oregano, thyme, brown sugar, cumin, and salt.
  3. Blend until smooth.
  4. Add an additional cup of the chile liquid and blend again until silky and well combined.

Brown the Pork

  1. Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.
  2. Working in batches, sear the pork on all sides until nicely browned.

  1. Add the remaining tablespoon of oil to the Dutch oven.
