These no-bake crispy chocolate peanut butter bars are a quick homemade dessert perfect for busy days. Made with creamy peanut butter, gluten-free crispy rice cereal, and a smooth chocolate topping, this easy recipe is ideal for meal prep, parties, and weeknight treats. Simple ingredients, minimal prep, and a firm chilled texture make these bars a top choice for no-bake desserts, peanut butter snacks, and chocolate peanut butter recipes. Perfect for gluten-free dessert lovers looking for a fast, reliable sweet option.

Ingredients

  • 6 tablespoons butter or vegan butter, softened
  • 1 1/4 cups + 2 tablespoons peanut butter, divided
  • 1 1/2 cups powdered sugar
  • 2 cups gluten-free crispy rice cereal
  • 1 cup gluten-free dark or semi-sweet chocolate chips

Instructions

  1. In a large mixing bowl or the bowl of a stand mixer, combine the softened butter and 1 1/4 cups peanut butter. Beat until smooth and creamy.
  2. Add the powdered sugar and mix again until fully incorporated.
  3. Add the crispy rice cereal and mix just until the cereal is evenly coated.
  4. Lightly coat an 8×8-inch baking dish (or a slightly larger dish if needed) with nonstick spray. Transfer the peanut butter mixture into the dish and press it into an even layer using a spatula.
  5. In a microwave-safe bowl, combine the chocolate chips with the remaining 2 tablespoons of peanut butter. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and fully melted (about 1 1/2 minutes total).
  6. Pour the melted chocolate mixture over the peanut butter layer and smooth the surface with a spatula.
  7. Refrigerate for about 25 minutes, or until the chocolate begins to firm up. Score the top lightly with a sharp knife.
  8. Return the bars to the refrigerator until completely set, ideally overnight. Slice and serve.

Tips

  • Use room-temperature butter for a smoother mixture and easier blending.
  • To avoid overly compact bars, mix the cereal gently so it stays crisp.
  • Scoring the chocolate before it fully hardens makes cleaner cuts the next day.
  • For easier removal, line the baking dish with parchment paper overhanging the sides.

Variations and Substitutions

  • Nut-free option: Replace peanut butter with sunflower seed butter.
  • Chocolate layer: Swap dark chocolate for milk or white chocolate if preferred.
  • Texture boost: Add a small handful of chopped peanuts or gluten-free pretzel pieces to the base mixture.
  • Sweetness level: Reduce the powdered sugar slightly if you want a less sweet bar.
