Pan Roasted Chicken Thighs

Pan roasted chicken thighs with crispy skin and tender, juicy meat cooked in a flavorful garlic, shallot, and lemon pan sauce. This easy oven-baked chicken thigh recipe is perfect for weeknight dinners, meal prep, or family meals, served with rice and made in one skillet for minimal cleanup.

Ingredients

  • 2 lbs bone-in, skin-on chicken thighs (about 6), excess skin and fat trimmed
  • 1/3 cup gluten-free flour
  • Homemade seasoned salt and black pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 1 large shallot or 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 1½ cups chicken broth
  • Juice of ½ lemon
  • For serving: cooked white rice

Directions

  1. Preheat the oven to 375°F (190°C). Season chicken thighs generously on both sides with seasoned salt and pepper.
  2. Dredge the chicken: Place flour in a shallow dish and season well with seasoned salt and pepper. Coat each chicken thigh in the flour, shaking off any excess, and set aside on a plate.
  3. Brown the chicken: Heat olive oil in a large oven-safe skillet (cast iron works best) over medium-high heat. Add chicken thighs skin-side down and cook until the skin is deeply golden, turning if needed to prevent burning. Flip and brown the second side. Transfer thighs back to the plate; they do not need to be fully cooked.
  4. Build the sauce: Carefully pour off all but about 2 tablespoons of fat from the skillet. Reduce heat to medium, add shallot, season lightly, and sauté until soft, 2–3 minutes. Add garlic and cook for 30 seconds.
  5. Deglaze: Pour in chicken broth and lemon juice, scraping up any browned bits. Bring to a boil, then reduce heat and simmer until the sauce slightly reduces, about 4–5 minutes.
  6. Bake: Nestle chicken thighs back into the sauce with any accumulated juices. Loosely cover the skillet with foil and bake for 15 minutes.
  7. Crisp the skin: Remove foil, spoon some sauce and onions over the chicken, then increase oven temperature to 425°F (220°C). Return skillet to the oven uncovered and bake 12–15 minutes more, until chicken reaches at least 165°F (75°C) internally and the skin is crisp.
  8. Serve: Spoon cooked rice onto plates, top with chicken thighs, and drizzle with the pan sauce.

  • Pat chicken skin dry before dredging for extra crispiness.
  • Use a splatter screen while browning to keep the stovetop clean.
  • Dark meat tastes best cooked a little higher than 165°F for tenderness.
