Pan-Seared Cauliflower with Tahini

Last Modified: April 8, 2026

Pan-seared cauliflower with tahini is a flavorful and healthy cauliflower steak recipe featuring crispy golden edges and a creamy lemon tahini sauce. This easy vegetarian dish combines roasted cauliflower, toasted pine nuts, and fresh herbs for a balanced mix of textures and bold Mediterranean-inspired flavors. Perfect as a plant-based main course or side dish, this recipe highlights simple ingredients while delivering a rich, nutty taste. Ideal for weeknight dinners or elegant meals, this cauliflower with tahini sauce pairs well with grains, salads, or grilled dishes.

Ingredients

  • 1 small garlic clove, finely grated
  • Juice of 1 lemon
  • ¼ cup tahini
  • Kosher salt, to taste
  • Cold water, as needed
  • 1 large head cauliflower, trimmed (leaves and stem removed)
  • Freshly ground black pepper, to taste
  • 4 tablespoons olive oil, divided
  • Flaky sea salt (such as Maldon), for finishing
  • 2 tablespoons pine nuts, toasted
  • ¼ cup pomegranate arils
  • ¼ cup fresh cilantro or mint leaves, torn

Instructions

  1. In a bowl, whisk together the grated garlic, lemon juice, tahini, and a pinch of salt. Gradually add cold water, one tablespoon at a time, whisking continuously. The mixture may thicken at first—keep whisking and adding water until you achieve a smooth, pourable sauce. Adjust seasoning with more salt or lemon juice if needed.
  2. Place the cauliflower head stem-side down on a cutting board. Trim a thin slice from each side, then cut two thick “steaks” (about 1½ to 2 inches thick) from the center. Reserve the remaining florets for another use.
  3. Preheat the oven to 350°F (175°C) and place a baking sheet inside to warm.
  4. Heat 3 tablespoons of olive oil in a large cast-iron skillet over high heat. Season the cauliflower steaks with salt and pepper on both sides. Place one steak in the hot pan, reduce heat to medium-high, and cook for about 5 minutes until deeply golden brown. Flip and cook the other side until equally browned.
  5. Transfer the seared steak to the preheated baking sheet in the oven. Add the remaining tablespoon of olive oil to the skillet and repeat with the second cauliflower steak.
  6. Roast the steaks in the oven until tender, about 10–15 minutes, or until a knife easily slides through the center.
  7. To serve, spread a generous layer of tahini sauce on each plate. Place the cauliflower steaks on top, then sprinkle with flaky sea salt. Scatter toasted pine nuts and pomegranate arils over the dish, and finish with fresh herbs. Serve immediately.

Tips

  • Cut the cauliflower evenly to ensure consistent cooking.
  • Use a very hot pan to achieve a deep golden crust.
  • Don’t overcrowd the skillet—cook one steak at a time for best results.
  • Adjust tahini sauce thickness by adding water gradually.

Variations and Substitutions

  • Swap tahini with yogurt sauce or hummus for a different flavor profile.
  • Use almonds or walnuts instead of pine nuts.
  • Replace pomegranate arils with dried cranberries or raisins for sweetness.
  • Try parsley or basil instead of cilantro or mint.

FAQs

Can I make this recipe vegan?
It is already naturally vegan.

How do I store leftovers?
Store in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or skillet.

Can I skip the oven step?
You can cook entirely on the stovetop over lower heat, but the oven ensures even tenderness.

Why is my cauliflower not tender?
It may need more time in the oven. Check doneness with a knife—it should glide through easily.
