This easy peach crisp recipe features a sweet, juicy peach filling topped with a crispy, buttery oat and almond crumble. Made with fresh or frozen peaches, brown sugar, and simple pantry ingredients, this homemade fruit crisp is a perfect dessert for any season. Bake until golden and bubbly, then serve warm with vanilla ice cream or whipped cream. Great for family gatherings, summer desserts, and holiday treats, this peach crisp is quick to prepare and full of flavor.

Ingredients

For the Filling:

  • 2 1/2 lbs peaches (about 8 medium), fresh or frozen*
  • 2 Tbsp fresh lemon juice (omit if using frozen peaches)
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar

For the Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1/8 tsp sea salt
  • 8 Tbsp (1 stick) cold unsalted butter, diced
  • 1/2 cup old-fashioned rolled oats or quick oats
  • 1 cup sliced almonds, divided

*If using frozen peaches, thaw and drain excess liquid before using.

Instructions

  1. Preheat & Prepare: Preheat oven to 350°F. Butter a 9×12-inch baking dish.
  2. Prepare the Peaches:
    • If using fresh peaches, blanch them by placing in boiling water for 1 minute, then transfer to ice water. Peel, pit, and slice into 1/2-inch pieces.
    • Toss sliced peaches with lemon juice in a large bowl.
  3. Make the Filling: In a small bowl, whisk together sugar and flour. Sprinkle over peaches and toss to coat evenly. Pour into the prepared baking dish.
  4. Prepare the Topping:
    • In a food processor, pulse together flour, granulated sugar, brown sugar, and salt.
    • Add diced butter and pulse until the mixture resembles pea-sized crumbs.
    • Transfer to a bowl, stir in oats, and use hands to form larger crumbles. Mix in 1/2 cup sliced almonds.
  5. Assemble & Bake: Evenly spread the topping over the fruit. Sprinkle the remaining 1/2 cup sliced almonds over the top.
  6. Bake: Bake for 45 minutes, or until the topping is golden brown and the fruit is bubbling at the edges.
  7. Cool & Serve: Let rest for 10 minutes before serving. Serve warm with ice cream or whipped cream if desired.

Tips

  • Ripe Peaches: Use ripe but firm peaches for the best texture and sweetness.
  • No Food Processor? Use a pastry cutter or your fingers to blend the butter into the dry ingredients.
  • Extra Crunch: Mix in chopped pecans or walnuts for a nutty twist.
  • Storage: Store leftovers in the refrigerator for up to 3 days. Reheat in the oven at 350°F for the best texture.

Variations and Substitutions

  • Gluten-Free: Use almond flour or a gluten-free flour blend.
  • Different Fruits: Swap peaches for nectarines, apples, or a mix of berries.
  • Less Sugar: Reduce sugar in the filling for a more naturally sweet taste.
  • Dairy-Free: Use plant-based butter for a dairy-free version.

FAQs

Can I use canned peaches? Yes, but drain them well to prevent excess liquid in the crisp.

Why is my topping not crispy? Make sure the butter is cold, and avoid overmixing to keep a crumbly texture.

Can I freeze peach crisp? Yes! Assemble it without baking, cover tightly, and freeze for up to 3 months. Bake from frozen, adding extra time as needed.

Serving Suggestions

  • Serve warm with vanilla ice cream or whipped cream.
  • Drizzle with caramel sauce for added sweetness.
  • Pair with a hot cup of coffee or tea for a cozy dessert.
