Ingredients

Noodles

  • 85 g (3 oz) instant ramen noodles (discard flavour sachet)

Broth

  • 1 tsp sesame oil
  • 1 pinch white pepper
  • ¼ tsp chilli flakes (red pepper flakes)
  • 1 garlic clove, peeled and minced
  • 1 chicken or vegetable stock cube, crumbled
  • 1 tbsp smooth peanut butter
  • 240 ml (1 cup) just-boiled water
  • 3 spring onions (scallions), finely sliced

Garnish

  • Extra sliced spring onions
  • Extra chilli flakes
  • Mixed black and white sesame seeds

Instructions

  1. Place the noodles in a large microwave-safe bowl.
  2. Add the flavourings: Drizzle in the sesame oil, then add white pepper, chilli flakes, garlic, crumbled stock cube, and peanut butter on top of the noodles.
  3. Pour over the hot water and flip the noodle cake 2–3 times to help it absorb the liquid and start mixing in the flavours.
  4. Microwave on high for 1 minute 30 seconds.
  5. Stir in the sliced spring onions.
  6. Microwave again on high for another 1 minute 30 seconds to 2 minutes, until the noodles are fully tender.
  7. Serve: Stir everything well, then garnish with more spring onions, chilli flakes, and sesame seeds before serving.
