Ingredients

For the Dip

  • 225 g (8 oz) cream cheese, softened
  • 120 ml (½ cup) sour cream
  • 115 g (4 oz) prosciutto, finely chopped
  • 50 g (½ cup) grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

For Dipping

  • Gluten-free crostini, crackers, pretzels, or pita chips

For the Roasted Garlic

  • 2 large or 3 small heads of garlic
  • Extra virgin olive oil

For the Hot Honey

  • 60 ml (¼ cup) honey
  • ½ teaspoon red chili pepper flakes (adjust to taste)
  • ½ teaspoon apple cider vinegar

Instructions

Roast the Garlic
  1. Preheat the oven to 200°C (400°F).
  2. Remove the loose outer layers of the garlic heads, keeping the cloves intact. Cut off the top third of each head to expose the cloves.
  3. Place the garlic heads on a sheet of foil and drizzle generously with olive oil.
  4. Wrap the foil tightly around the garlic to seal in steam, then place on a baking sheet.
  5. Roast for 35–45 minutes, until the cloves are soft and golden.
  6. Let cool slightly, then squeeze the roasted cloves into a large mixing bowl. Discard any overly dark or hard pieces.
Prepare the Dip
  1. Add the softened cream cheese and sour cream to the bowl with the roasted garlic. Using a hand mixer, beat until smooth and creamy, about 1 minute.
  2. Add the chopped prosciutto, Parmesan cheese, oregano, salt, and pepper. Stir with a spatula until well combined.
  3. Cover and refrigerate for at least 4 hours, or up to overnight, to allow the flavors to develop.
Bake and Finish
  1. Preheat the oven to 200°C (400°F). Transfer the dip to a medium baking dish or a 23 cm (9-inch) pie plate and spread evenly.
  2. Bake for 8–10 minutes, until warmed through.
Make the Hot Honey
  1. While the dip is baking, combine the honey, chili flakes, and apple cider vinegar in a small bowl. Microwave for 15 seconds, then stir well.
  2. Drizzle the hot honey over the warm dip before serving. Serve warm or at room temperature.
