  • 1/3 cup Parmesan cheese, finely grated

For Cooking & Assembly:

  • 3 Tbsp olive oil (plus more as needed)
  • 2 cups marinara sauce
  • 6 fresh basil leaves, finely chopped (for garnish)

Instructions

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Cut a deep slit into the side of each chicken breast, being careful not to cut all the way through.
    • Stuff each chicken breast with 2-3 Tbsp of shredded mozzarella, then press the edges together to seal.
  2. Set Up the Breading Station:
    • In one bowl, add the flour.
    • In a second bowl, beat the eggs with a fork.
    • In a third bowl, combine the bread crumbs and Parmesan cheese.
  3. Bread the Chicken:
    • Dredge each stuffed chicken breast in flour, shaking off the excess.
    • Dip it into the beaten eggs, allowing any excess to drip off.
    • Coat it with the breadcrumb mixture, pressing gently to ensure an even coating.
  4. Pan-Sear the Chicken:
    • Heat 3 Tbsp olive oil in a large, deep pan or Dutch oven over medium heat.
