Stuffed Potato Pancakes – Draniki

Instructions

  1. Prepare the Potato Mixture:
    Grate the peeled potatoes using the star side of a box grater (use gloves to protect your hands). After grating, spoon off and discard any excess liquid (about 1/3 cup).
  2. Grate the Onion:
    Grate the medium onion using the same star grater side and add it to the grated potatoes. Set aside 1 tablespoon of the grated onion for the meat mixture.
  3. Mix the Potato Pancake Batter:
    In the bowl with the grated potatoes and onion, add the egg, flour, sour cream, salt, and black pepper. Stir the mixture until well combined. Set aside.
  4. Prepare the Meat Filling:
    In a separate bowl, combine the ground pork (or alternative meat), salt, black pepper, and reserved grated onion. Mix until just combined. Divide the meat mixture into 16 thin patties, each about 2 inches wide.
  5. Cook the Draniki:
    Heat 2-3 tablespoons of oil in a large non-stick skillet over medium heat.
