Ingredients

  • 1 lb gluten-free gemelli or any medium-cut pasta
  • 4 tablespoons extra-virgin olive oil
  • 1 large shallot or ½ small onion, chopped
  • 12 oz sweet apple chicken sausage (or similar), sliced
  • 1 sweet apple, peeled and chopped
  • 4 cloves garlic, minced
  • Pinch red chili pepper flakes
  • Salt and pepper, to taste
  • 1 can (15 oz) Great Northern beans, drained and rinsed
  • 6 oz baby spinach
  • 1 cup chicken broth
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente.
Reserve ½ cup of the cooking water, then drain and set the pasta aside.
  2. Sauté the Sausage and Aromatics
Heat the olive oil in a large skillet over medium-high heat.
Add the chopped shallot and sliced sausage, sautéing for about 3 minutes, or until the sausage is golden.
  3. Add Apple and Seasonings
Stir in the chopped apple, garlic, and red pepper flakes. Season with salt and pepper.
Cook for about 5 minutes, or until the apples are tender.
  4. Add Broth, Beans, and Spinach
Pour in the chicken broth, add the Great Northern beans, and toss in the spinach.
Use tongs to mix until the spinach wilts, about 1 minute.
  5. Combine Everything
Transfer the sausage-apple mixture to the pot with the cooked pasta.
Add the Parmesan cheese and stir to combine.
Add reserved pasta cooking water as needed to achieve a creamy, cohesive texture.

Tips

  • Reserve pasta water—its starch helps bind the sauce and improve consistency.
  • Use a firm, sweet apple like Honeycrisp, Gala, or Pink Lady for the best texture.
  • Slice the sausage evenly so it browns uniformly.
  • If the pasta dries out while mixing, add more chicken broth or pasta water.
  • Freshly grated Parmesan melts more smoothly than pre-grated varieties.

Variations and Substitutions

  • Pasta: Use regular gemelli, fusilli, rotini, or penne if not gluten-free.
  • Sausage: Substitute with chicken and apple sausage, turkey sausage, or mild Italian sausage.
  • Beans: Swap Great Northern beans for cannellini beans or chickpeas.
  • Greens: Use kale or arugula instead of spinach.
  • Spice level: Add more chili flakes or a pinch of smoked paprika.
  • Broth: Vegetable broth works well for a lighter flavor.

FAQs

Can I make this ahead?
It reheats well, but add a splash of broth when reheating to restore creaminess.

What type of apple works best?
Crisp, sweet varieties hold their shape and complement the sausage.

Can I make this dairy-free?
Yes—omit the Parmesan or use a dairy-free alternative.

Can I use a different sausage?
Any fully cooked chicken or turkey sausage works.
