Ingredients

  • 1 cup short-grain sushi rice
  • Rice vinegar and sugar, for seasoning the rice (per package instructions)
  • 1 ripe avocado, sliced
  • 1 cucumber, peeled, seeded, and chopped
  • 1 carrot, cut into thin matchsticks

  • Gluten-free reduced-sodium tamari (or soy sauce if not gluten-free)
