  • 250g dark chocolate
  • 100ml heavy cream
  • 50g unsalted butter
  • 250g Scotch Finger biscuits
  • 50g shelled pistachios
  • 50g dried cranberries
  • 2 Tbsp icing sugar, for coating

  1. Melt the chocolate mixture:
    Place the dark chocolate, cream, and butter in a large heatproof bowl. Cover and microwave for 1 minute. Let the mixture sit for 3 minutes, then stir until completely smooth and combined.
  2. Add the mix-ins:
    Roughly crush the Scotch Finger biscuits by hand or in a ziplock bag with a rolling pin. Add the crushed biscuits, pistachios, and cranberries to the melted chocolate. Mix thoroughly until everything is evenly coated.
  3. Shape the salami:
    Transfer the mixture onto a large piece of clingfilm. Form it into a log shape, then roll it tightly in the clingfilm, twisting the ends like a candy wrapper to seal. Chill in the refrigerator overnight, or until firm.
  4. Finish and serve:
    Unwrap the chilled log and roll it in icing sugar to resemble a dusted salami. Slice into rounds and serve. Keep refrigerated until ready to enjoy.
