  1. Heat a large skillet over medium-high heat. Add the ground beef and chopped shallot or onion. Cook, breaking up the meat, until the beef is fully browned.
  2. Drain the beef mixture in a colander, then return it to the skillet.
  3. Stir in the taco seasoning, salsa, and chicken broth. Bring the mixture to a gentle simmer.
  4. Add the rice, stir well, then cover the skillet with a lid. Reduce the heat to low so the liquid is barely bubbling.
  5. Simmer for 15–20 minutes, or until the rice is tender and most of the liquid is absorbed.
  6. Remove the skillet from the heat. Sprinkle the shredded cheese over the top and stir until melted and creamy.
  7. Cover again and let rest for 5 minutes. Serve warm with your favorite toppings.
