  3. In a small bowl, combine the sea salt, black pepper, Italian seasoning, garlic powder, and ground coriander. Sprinkle this dry rub generously over the pork tenderloin, then rub the spices in with your hands until evenly coated.
  4. Heat 1 Tbsp of oil over medium-high heat in a large oven-safe pan (such as cast iron or a Dutch oven). Once hot, add the pork and sear it on all sides for about 6 minutes, until browned.
  5. Transfer the pan to the preheated oven and bake the pork uncovered for 13-15 minutes. Flip the tenderloin halfway through the cooking time. Bake until the internal temperature reaches at least 150°F.
  6. Remove the pork from the oven and transfer it to a cutting board. Let it rest for 5-10 minutes before slicing it into medallions.
