Make easy French Dip Sliders with Hawaiian rolls, roast beef, provolone cheese, caramelized onions, and a rich au jus dipping sauce. This quick recipe is perfect for party appetizers, game day snacks, or weeknight dinners. Simple to prepare, full of flavor, and ideal for feeding a crowd.

Ingredients:

  • 1 Tbsp olive oil
  • 2 Tbsp unsalted butter
  • 1 large or 2 medium yellow onions, thinly sliced
  • ¼ tsp sugar
  • 1 oz au jus mix (prepared per package instructions)
  • 3 cups water (adjust to taste)
  • 16 Hawaiian sweet rolls
  • ¼ cup mayonnaise
  • 1 lb deli pastrami or roast beef, thinly sliced
  • 9 slices mild provolone cheese
  • 2 Tbsp unsalted butter, melted (plus more for greasing the baking sheet)
  • 1 Tbsp sesame seeds

Instructions:

  1. Preheat & Prepare: Preheat the oven to 350˚F. Lightly grease a rimmed baking sheet with butter.
  2. Caramelize the Onions: Heat a large skillet over medium-high heat. Add olive oil and 2 Tbsp butter. Once melted, add sliced onions and sauté for 5 minutes until softened. Sprinkle with sugar and continue to cook uncovered for another 5 minutes, stirring often, until onions are golden and caramelized. Transfer to a plate.
  3. Prepare the Au Jus: In the same skillet, add 2 ½ cups of water and scrape up any browned bits from the bottom of the pan. Stir in the au jus seasoning and bring to a boil. Reduce heat and simmer according to package instructions. Adjust seasoning by adding more water if needed.
  4. Assemble the Sliders: Slice the Hawaiian rolls in half horizontally, keeping them connected. Place the bottom half on the prepared baking sheet. Spread mayonnaise evenly over the rolls. Layer the roast beef or pastrami over the rolls, followed by the caramelized onions. Add the provolone cheese slices on top.
  5. Top & Bake: Place the top half of the rolls over the fillings. Brush with melted butter and sprinkle with sesame seeds.
  6. Bake: Bake uncovered for 12-15 minutes or until the cheese is melted and the tops are golden brown.
  7. Serve: Cut the sliders apart with a serrated knife and serve warm with the prepared au jus sauce for dipping.

Tips

  • Even Caramelization: Stir the onions frequently to avoid burning and ensure an even golden color.
  • Cheese Melting: If the tops brown too quickly before the cheese melts, loosely cover with foil and continue baking.
  • Dipping Sauce: Adjust the au jus seasoning with extra water to control the saltiness.
  • Crispier Buns: For a crunchier texture, bake the sliders on a wire rack over the baking sheet.

Variations and Substitutions

  • Different Cheese: Swap provolone for Swiss, mozzarella, or cheddar.
  • Alternative Meat: Use turkey, ham, or corned beef instead of roast beef.
  • Bread Options: Substitute Hawaiian rolls with brioche buns or slider rolls.
  • Extra Flavor: Add a thin layer of horseradish or Dijon mustard for a tangy kick.
